COCONUT COOKIES RECIPE -

PREPARATION TIME – 10 MINS

INGREDIENTS FOR COCONUT COOKIES -

  • 1 cup powder sugar
  • ½ cup margarine
  • ½ cup butter
  • 1 ½ cup Maida / all-purpose flour
  • 1 cup coconut powder
  • 2 tsp milk powder
  • 2 tsp custard powder
  • A pinch of soda
  • ½ tsp baking powder
  • ¼ tsp ammonia
  • 1 tsp milk
  • 1 tsp liquid glucose

METHOD FOR COCONUT COOKIES-

  • In a large bowl combine the butter , powder sugar , margarine , coconut powder, milk powder, milk and liquid glucose and whisk it together for 2-5 mins or until the mixture is light and fluffy
  • In another large bowl combine the Maida , baking powder, baking soda and ammonia and mix it well
  • Now add the Maida mixture to the butter sugar mixture one spoon at a time folding it into a smooth dough with the help of a spatula
  • Once the dough is ready place it in the refrigerator for about 3-4 hours
  • When you are ready to bake the cookies pre heat your oven at 170 degrees Celsius for about 5-10 mins
  • Before placing the cookies in the oven, roll the cookies in even balls and take a little bit of strawberry jam and put a drop of it in the center and garnish with some desiccated coconut,     
  • Now place the tray in the preheated oven for about 12-15 minutes , or until they turn a little brown from the edges, you can also see the bottom of the cookie if its slightly brow , that means the cookies are ready
  • Once the cookies are baked , let them cool for about 5 mins and then they are ready to be served
  • Crispy , delicious coconut cookies are ready !
