EGGLESS VANILLA CUPCAKES WITH VANILLA BUTTERCREAM FROSTING

YIELD – 12 CUPCAKES

INGREDIENTS FOR THE EGGLESS VANILLA CUPCAKES

  • 120 gms Maida/all-purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 65 gms butter
  • 200 gms condensed milk
  • 50 ml water
  • 50 ml milk
  • 2 tsp vinegar
  • 20 gms sugar
  • 1 tsp vanilla essence

METHOD FOR EGGLESS VANILLA CUPCAKES

  • In a medium sized bowl shift together Maida , baking soda and baking powder
  • Next , in a slightly bigger bowl cream together butter and milkmaid till soft and fluffy
  • Once soft and fluffy , add the sugar slowly one spoon at a time
  • Once the sugar is well incorporated , add in the vanilla and fold well
  • In a smaller bowl combine water , milk and vinegar and stir well
  • Add the above mixture into the butter mixture and fold gently
  • Once incorporated well , start adding the dry ingredients slowly until it forms a smooth batter
  • Pour the prepared batter into cupcake molds and bake it in a pre-heated oven at 170 degrees for 20 mins or until a skewer comes out clean
  • Eggless vanilla cupcakes are ready !

INGREDIENTS FOR VANILLA BUTTERCREAM

  • 100 gms butter
  • 125 gms icing sugar
  • 1 tsp vanilla essence
  • 2 tbsp. milk

METHOD FOR VANILLA BUTTERCREAM

  • In a large mixing bowl cream together butter and sugar till light and fluffy
  • Once fluffy add in the vanilla essence and milk and fold well
  • Do use a little bit more milk if u feel the icing is a little hard , it should be soft and creamy
  • Once the icing is ready pour it into a piping bag with the nozzle of your choice and frost beautiful cupcakes.
