EGGLESS CARROT CAKE

INGREDIENTS FOR EGGLESS CARROT CAKE

  • 215 gms peeled and grated carrots
  • 175 gms flour
  • 95 gms chopped walnuts
  • 110 gms brown sugar
  • 65 gms castor sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon powder
  • 1/2 tsp salt
  • 1 flax egg [ 1 table soon of flax seed mixed with 45 gms water ]
  • 150 ml vegetable oil

METHOD FOR EGGLESS CARROT CAKE

  • In a medium sized bowl combine the flour , baking soda , baking powder , cinnamon powder , and salt , shift once or twice to get rid of any lumps
  • Next in another larger bowl add the vegetable oil , brown sugar and castor sugar and whisk well until its nicely combined
  • Now add in the flax egg into the oil sugar mixture and whisk again till its nicely incorporated
  • Once the wet ingredients¬† are nicely mixed add in the dry ingredients and fold well into a smooth mixture , it will be a little thick
  • Finally add in the chopped walnuts and the peeled carrots and fold them well into the batter
  • Now , the eggless carrot cake batter is ready , pour it into an greased cake tin and bake it in an pre heated oven at 180 degrees Celsius for 35 – 40 minutes or until a skewer comes out clean
  • Our delicious carrot cake is ready , tastes the best with some vanilla ice cream or plain vanilla frosting
