STRAWBERRY SPONE CAKE WITH CREAM CHEESE FROSTING

YIELD- 1/2 KG CAKE 

SERVES – 4 -6

INGREDIENTS FOR STRAWBERRY SPONGE CAKE

  • 115 gms Maida/flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 200 gms milkmaid
  • 60 gms butter
  • ½ tsp vanilla essence
  • ½ tsp strawberry essence [ optional ]
  • 50 ml water
  • 40 ml milk
  • 2 tsp vinegar

INGREDIENTS FOR STRAWBERRY JAM

  • 1 cup strawberries
  • ½ cup sugar
  • 2 tbsp. water

METHOD FOR STRAWBERRY SPONGE CAKE

  • In a bowl add Maida , baking soda and baking powder and whisk them well together
  • In another bowl whisk together the butter milkmaid, vanilla and strawberry essence
  • Now in a small cup mix the water ,milk and vinegar and allow it to curdle
  • Once it is forms some curds pour it in the butter milkmaid mixture and whisk well
  • Next start adding the flour into the butter milkmaid mixture one spoon at time , folding it into a smooth batter using a spatula
  • Once the batter is nice and smooth cover it with a damp cloth and keep aside till we work on the strawberry jam
  • For the strawberry jam , take a medium sauce pan and pour the water, sugar and strawberries
  • Let the strawberry come to a boil it will take around 5- 10 mins
  • Once the strawberries come to boil they will leave water and the mixture should be sticky , at this stage keep on mixing it well with the help of a spatula till it turn into a jam consistency , it takes around 3-4 mins.
  • Once the strawberry jam is ready , pour half of it into the prepared cake batter and fold it well into a smooth uniform batter ,[ save the rest of the strawberry jam for the icing ]
  • Next , take a ½ kg greased tin and pour the batter in the middle
  • Give it a gentle tap on the counter and place it in an preheated oven at 180 degrees Celsius for about 20-25 minutes or until a skewer comes out clean
  • Once the cake is baked , de mold it and keep it aside to cool

THE CREAM CHEESE FROSTING

INGREDIENTS FOR THE CREAM CHEESE FROSTING –

  • 100 gms unsalted butter
  • 150 gms cream cheese
  • 1 cup icing sugar

METHOD FOR CREAM CHEESE FROSTING

INGREDIENTS FOR THE CREAM CHEESE FROSTING –

  • 100 gms unsalted butter
  • 150 gms cream cheese
  • 1 cup icing sugar

ASSEMBLING THE CAKE

  • Remove the top of the sponge
  • Cut it in the center, take the frosting and spread it over the sponge and top it up with the other sponge and apply the frosting all over
  • Refrigerate the cake for ½ an hour and serve !
